Simcoe hops epitomize the soul of west coast IPA, with an unmistakable blend of resinous pine, dank earth, and pithy citrus. Loftus Ranches in the Yakima Valley supplied us with a fantastic crop of wet Simcoe hops, which we used in the whirlpool at a rate of over 20 pounds per barrel. A subsequent dry-hop with frozen-fresh Simcoe boosts that sticky/piney/citrus nature to full brightness. The finish is dry and refreshing, with a lingering bitter bite that brings you back for more.
